I am not Alan and I don't pla him on TV, but I time my tests fro the end of the meal. Not only am I a fast eater, but for most meals my carbs come at the end in the form of a piece of fruit for dessert, so it makes the most sense to me to time from that. if I were to start my meal with a buttered roll, I would count from then.
